Chicken & Pasta Spinach Bake
Ingredients:
- 1 (12 ounce) package rigatoni pasta
- 1 tablespoon olive oil
- 3/4 cup diced onion
- 1 (10 ounce) package frozen spinach, thawed and drained well
- 3 cups cubed cooked chicken breast
- 1 (14 ounce) Italian-style diced tomatoes, drained
- 1 (8 ounce) container of chive & onion cream cheese
- 1 package of shredded mozzarella cheese
Steps:
- Season chicken breasts (I used 3) with salt, pepper, and garlic powder
- Cook chicken breasts anyway you prefer (I roasted in foil in oven at 425 for 20 minutes)
- Prepare rigatoni according to directions
- In a 11x17 baking dish, pour olive oil over bottom. Spread diced onion in a single layer over top of the oil. Place in oven at 375 and bake for 15 minutes
- Mix together drained and chopped spinach, rigatoni, diced tomatoes, cream cheese, and onions
- Salt and pepper the mixture
- Add and mix in the cubed chicken
- Spray same baking dish you cooked the onions with non-stick cooking spray
- Spoon mixture into baking dish
- Top with mozzarella cheese
- Baked covered at 375 for 15 minutes
- Uncover and bake until cheese is bubbly
Seriously, very easy and sooo good! I served with a salad and croissants. Great for leftovers as well! Enjoy!
